This week, two-Michelin-starred Restaurant Sat Bains in Nottingham was given the number one spot on the Sunday Times 100 Restaurants list, in association with Hardens, rising from sixth place last year. The 2015 Chef Award Catey winner speaks exclusively to Amanda Afiya about the news.
What does coming top of the Sunday Times 100 Restaurants list say about Restaurant Sat Bains?
For the last five years we’ve been looking very carefully at what we do. We don’t want another restaurant – I’m a one-restaurant guy – and so Amanda and I thought if we are going to put all our eggs in one basket, we wanted to create something really special with a world-class product, a gastronomic destination and food with an identity. What we have now is an identity unique to its location, developed from my 28 years of cooking.
How have you actually achieved that?
We now have four sommeliers, 36 staff, but we are not going out of our way to chase accolades. We are focused on delivering a world-class service. When guests come in through the gates, or turn the corner to the property, they see trimmed hedges, they get the warm homely smell of candles as they walk through the door, they are met with a smile.
