It’s always great to receive positive feedback about one of our members.  This week we received an email from Alison at Bristol Metropolitan Academy.  Chef Scott Lucas popped in to the Academy to do a demonstration which included knife skills and vegetable prep to make vegetarian pasties.  The pupils watched Scott as he prepared Macedoine, Jardiniere, Paysanne, Brunoise, Julienne, Mirepoix and Solferino – all classical cuts that trainees need to learn.  They then had a go themselves.  Pupils also made short crust pastry for the pasties.  The session ended with a question and answer session about the industry. 


Alison told us “I just wanted to let you know that Scott Lucas came into my school this week on Wednesday and Friday. He did a demonstration of knife skills to my two GCSE groups and it was a great success!  Scott was excellent, he was very good with the pupils and I really appreciated his help.
